If the climate control is set to 'auto' it should adjust the temperature and fan speed itself (std Audi function). Although normally when you manually adjust, it turns the auto off. I've been in audis for 10 years and they have all worked this way. I haven't got my A5 yet, so maybe they have made some changes...?
