I had an Evo before the A5 and that used to pop and bang like crazy, even more so once I'd installed a larger stainless steel exhaust de-cat system, I loved it! 
I'm no expert but I believe it's unburnt fuel in the exhaust igniting causing the odd bang and occasional flame to come out of the tailpipes. When I had a new ECU remapped they actually mapped it so I would have more pops and bangs, God I loved that car!
